Take a travel pram you can rent them or buy them for around £100-150. If your only going to a transfer from the airport to hotel don’t bother with a car seat if you’re renting a car or travelling regularly in a car on the holiday then take both x
If your flying a stroller and car seat are free of charge since it’s seen as medically necessary for the baby and if you are flying I highly recommend bringing a baby carrier
Depending on the age of your baby - but we borrowed a Doona which was super useful and convenient for travel
I flew to Copenhagen recently with easyJet and I had the baby in the carrier through the airport and I checked my pram and car seat at the baggage drop off. But 100 % worth the hassle. You will definitely want to have the stroller for baby to be in - especially in Norway at this time a year. Most airlines offer you to check those to items for free. But I found it smoother through the airport with baby in the carrier then having the stroller through the airport for sure as I also had my backpack and her little carrie on bag.

I would definitely do a stroller and car seat combo. He will still be doing naps on the go so now having to take him out of the car seat all the time will be great. I would just try to check items but also pack as minimally as you can. Maybe check 1 bag and have one or two carry ons. And depending on what airline you fly you might be able to have a diaper bag for free so definitely check that but besides that you’d get a personal item for you and your spouse
But you’re only going for a week so I think you could easily just do two suitcases. Whether that’s carry on or checked
