When was your period in January? That’s probably what they are going off of? 7 weeks and 3 days ago puts you at the very last few days of January but unless you gave them your period date that is just a guess from your ultrasound! All due dates are just random guesses!
When was your last menstrual period? Did you give them that at the ultrasound? They would’ve measured the embryo and based on measurements seen if you measured within 5-7 days of your last menstrual period. The earlier an ultrasound the more accurate it is for dating the pregnancy. You’re technically pregnant for two weeks before you ovulate when it comes to dating pregnancies since they’re dated by last menstrual period. So you would’ve ovulated likely 5 weeks and 3 days or so ago.

I wouldn't sweat the conception date if you weren't tracking your sexual activity and cycle. Just enjoy it!! Congrats 🎉
