Go for meals high in protein, fibre and complex carbs. Use Google to find options. Try to have several small meals instead of heavy ones. Drink lots of water. Try to avoid foods with added sugar and fruit juices.
I’m actually surprised your doctor didn’t put you on metformin because I’m also insulin resistant and pre-diabetic and they put me on metformin to keep me from developing full-blown diabetes. I got that diagnosis over five years ago, and I still have not developed diabetes.
