That's what forks are for. My kid would happily grab a fork or spoon loaded with food. It took her a bit to develop the skill to use them by herself. But she could help guide the utensil to her mouth pretty quickly.
You could try some sensory play not in her high chair. For example I blended up plain cheerios to make sand and put a few of her toys in it. There are a lot of ideas online that you could try to help her get used to touching other textures.
@Anna she’s great at guiding spoons to her mouth when it’s things like scrambled eggs but when it’s strips of food such as an omelette she won’t go near it

@Deval yes, she’s the same! she absolutely loves banana but if i give her a bit to pick up to eat she acts as if it’s poison! i usually have the same thing as her for breakfast so hopefully she’ll try copy me over time! thank you!
My baby didnt gag, but she did not like to touch food too when I transitioned to BLW. I noticed she didnt like to touch slimy foods like banana. We sat with her and ate the same foods, and she became interested in what we were eating at about 10 months. Try different textures, I made rice patties as she didnt like texture of rice. Keep offering foods and try to eat the same food as baby atleast once a day.
