Really struggling with this too. Even with leftovers it feels like it takes too long and I can't get anything done! He's starting to eat so much more too so sometimes he's eating for 35/40 minutes and I bring him to work with me 🥴
It really is one of the Hardest parts of having a child. I try to find food that you can make a bunch of and then freeze. We always have cottage cheese pancakes and meatballs frozen so its quick to heat up and serve for easy meals when needed and I save the harder meals for when I have the time and mental capacity
Like Sammi said; prepping things you can freeze and just thaw really saves me too. We also do the cottage cheese pancakes, or a muffin prepped in bulk earlier in the week. We are vegetarian so I will blend bulk peas, green beans and corn with garlic and just chop finely and freeze/thaw portions a day or two before, then just toss with chopped garbanzo beans often, which takes a minute to prep and just give him a scoop of cottage cheese with fruit. Just easy meals.
Or things like toast strips with avocado, and then oatmeal and fruit and a cucumber or shredded carrot * prepped ahead*.
@Beth mine eats for like an hour, she eats so slow which is good for her but 😩
What are you eating for lunch? When we have gone out to eat I bring something he eats well if there isn’t anything I want him having from the restaurant. Or if we are busy busy I make a smoothie with spinach, kale and fruits to take on the go.
My daughter is still trying to accept food and she eats a few things then throws everything else on the ground. I gave up giving her big portions because it's so wasteful. She won't drink water so I have to add water to her milk.
@Nicole I honestly don’t really eat lunch, I eat a late breakfast and then just snack on fruit then dinner
I’m with you on this. I’ve started using the snack pouches for lunches. My twins aren’t interested in solids at all so it’s been a task.
