Hummus (blend chickpeas, lemon juice, garlic, pepper and tahini with olive oil, add water to get desired consistency). Chickpea burgers or patties as above. Chickpea curry - squash the chickpeas in her serving and give naan to scoop or rice balls to serve. Fajita traybake with chickpeas (a family favourite for us) - mix chickpeas, garlic cloves, tomato and onion wedges and pepper slices with olive oil, cumin, smoked paprika and oregano, top with chicken thighs (or halloumi works great as veggie alternative). Bake in oven (about an hour for chicken, would say 30 mins without halloumi then add halloumi for another 10-15). Serve with guac, grated cheese, tortilla strips, and mash the chickpeas to spread on tortilla, and serve the other cooked veg/strips of chicken/halloumi as finger food.

You could try just hummus!
