Sounds like a great way to spend your newfound time! I have taught kids art classes in the past and it really is a blast. One other recommendation is to only focus on one craft a day vs. multiples in one meet up. Over stimulating was a real thing in my experience. If you are worried about the time I would add details/extra steps to one project instead of an additional project.
I've done a few things like this! They usually figure the price out for each individual craft! I would say snacks included are nice but a lot of people will end up bringing their own!

$10 to start then bump it down to $5 if you aren’t getting many crafters. I’d say most people wouldn’t change their mind about signing up over the price difference if they’re already considering it and the extra $5 per person would add up quickly for your supplies.
