Baby won't eat in his highchair anymore but will happily sit on the floor/couch and eat
He'll eat 2 or 3 bites of his meal then ask to get down, if I take him out his chair and leave his meal within reach he will still eat it. It just seems he doesn't want to be in his highchair anymore? I'm not really sure what to do?

Very common at this age. Most people around this time switch to a toddler table and chairs.
My little girl used to be the same. I got her a little toddler table and chair and she loves to sit down at her table and eats her food now. However if she doesn’t have the “same” plate as me and her dad she won’t eat her food. eg I have black plates and I had to go and find a plastic plate in black for her because she wants the same as her mummy and daddy. It’s the same with cutlery as well.
