Yes carry all docs plus you might need a permission letter/doc from your husband or legal to show you have fathers permission to travel with the child as some countries at the desk might ask to see this on landing, I think this is to safeguard the child from abduction or trafficking.
I recently travelled with my two who have their dad’s surname and we are split. Leaving the country was fine, returning to the UK is when I was questioned. I just took photographs of their birth certificates and that was sufficient enough. It very much depends on the person at control I think!
