Yep, indication of dehydration or other health issues. You should seek done medical advice as this is quite pronounced (perhaps 111 if you are in the U.K.).
Yeah I know it means dehydration that’s why I’m worrying but it’s just so strange that sometimes it’s sunken and others it’s not

Well because the baby is clearly not retaining enough fluids. But speak to a medical professional.
We were told if any sunken in signs or can signal dehydration, I would speak to your GP or HV X
A sunken soft spot can indicate dehydration but also can look sunken from some angles. My sons regularly looked sunken in. Could also just mean baby hasn’t fed in a while. Keep an eye on it and mention it to a doctor if it persists?
